Zucchinis are nice and I can’t wait for them to start coming in but then you have to get creative fast.
Here is one of the ways I get the kiddos to eat these green things.
Cut the ends off. Using a potato peeler, I start peeling lengthwise in long thin strips of zucchini that look like fettuccini noodles. I keep going all the way down to the seeds. That part gets tossed out.
Then just heat it up quick in a large pot with some pasta sauce and you have a healthy carb free side dish.

Zucchini blini! Substitute shredded zucchini for the shredded potatoes. The recipe is on my blog somewhere.
I had an Uncle that had a bumper crop of Rubarb one year and he was sorely taxed to find ways to get folks to eat it all. Its a shame he didn't get a chance to get to know someone like you who could have given him some really yummy looking recipes.
He had Rubarb cake, cookies, bread, muffins, ice cream, chicken stuffing, pies, fried, baked, boiled, broiled, burnt, BBQ'ed, and more. :)

I'm loving it girlie. I've gotten one so far to grow big enough ... LOL. Enough for bread :)
